Our collaboration with this cooperative is based on strong values: a human scale (110 producers), fair remuneration, and environmentally friendly farming practices.
Organic certification attests to a genuine commitment on the ground. And to go even further, choosing sail-powered maritime transport reduces the carbon footprint associated with imports, while telling a beautiful story of slowness, wind, and the ocean.
Each cup becomes a conscious act: refined tasting and thoughtful impact.

Fermentation process

This batch is processed using the washed method, a choice that emphasizes clarity and aromatic precision. The cherries are hand-picked at perfect ripeness, then sorted before being pulped. The coffee then ferments for 12 to 18 hours, depending on the ambient temperature, long enough to develop a crisp acidity without losing its smoothness. Once washed, the beans are sun-dried, either on patios or in solar tunnels when the weather requires it.
This process yields a clean, bright, and very balanced coffee, where the fruity notes remain well-defined and the finish is smooth.

“When we cultivate at these altitudes, under benevolent trees, with the breeze passing through the leaves, we are not just harvesting beans: we are harvesting a relationship between human, earth and sky. This coffee is my voice, the voice of our cooperative,” shares one of the cooperative members.
Our sourcing focused on this lot precisely because it embodies the alliance of an exceptional terroir, an agroforestry lifestyle, a concern for quality (internalized Q-grader) — and environmentally friendly transport by sailboat.
