The coffee is first washed according to the classic Colombian process: pulping, wet fermentation and thorough washing, which gives a clean, sweet and balanced base.
Decaffeination then takes place using the EA Sugarcane process: ethyl acetate derived from sugarcane is used to extract the caffeine. The beans are moistened, the EA binds to the caffeine molecules, and then the coffee is steamed to eliminate any residual traces.
This natural and gentle process preserves the aromatic integrity of the coffee, while enhancing its roundness and sweetness.
The result: a delicious, stable and clean decaf, far from the flat or drying profiles of classic decafs.
