Fermentation process

The coffee is first washed according to the classic Colombian process: pulping, wet fermentation and thorough washing, which gives a clean, sweet and balanced base.
Decaffeination then takes place using the EA Sugarcane process: ethyl acetate derived from sugarcane is used to extract the caffeine. The beans are moistened, the EA binds to the caffeine molecules, and then the coffee is steamed to eliminate any residual traces.
This natural and gentle process preserves the aromatic integrity of the coffee, while enhancing its roundness and sweetness.
The result: a delicious, stable and clean decaf, far from the flat or drying profiles of classic decafs.

Producer's vision

The producers behind Free to Sleep are families who cultivate coffee on small plots of 1 to 4.5 hectares in several Andean regions. Their priority: to obtain a stable income, improve the quality of their batches, and guarantee a sustainable future for their community.
Thanks to Sucafina Colombia's integrated model, they benefit from access to the specialty market, training on post-harvest practices, and programs that take into account the social reality on the ground.
For them, this decaf represents an opportunity: to prove that a caffeine-free coffee can be as expressive, crafted and rewarding as a conventional batch — while strengthening the Colombian rural fabric.
